These cables connect HDMI devices to the Control Unit. Each system typically uses one HDMI cable, either for a Touchscreen or the first TV Display (if the system doesn't include a Touchscreen).
Due to the nature of video signals, it is recommended that the HDMI be no further than 25 feet from the Control Unit.
